How do I install X? How do I change my login so that it doesn’t boot
the qnx gui by default, but gives me a textual login? What can I then
type to load either X or photon gui? (ie so that I’ve got a choice).

To avoid Photon starting create following file (it can be empty):
/etc/system/config/nophoton
Photon is started with the command: ph
If you want X, then you need to install something like XFree86 - go to
http://sourceforge.net/projects/openqnx to get the latest version

I have downloaded and installed XFree86 (probably many times) - and when I
try startx, it says something about xinit getting an unexpected ( or
something. Any ideas?

A typical problem is that there is no mouse device.
Can you post /var/log/XFree86.0.log?
