Characert Set Photon - problem ?

Hi to all .I am new on the forum. I have one jear of Photon programing beside me. I live in Poland where we have funny leters in our language . I don’t know how to set them in Photon . I am talking about ISO 8859-2 Characert Set. Or in General about changing Character Set in Photon.
Maybe You know , where in Photon can I swich it ?
