More than one graphics card

I would like to run more than one monitor from a single computer - each
displaying
a different application. What is the best way to do this?
I can use multiple graphics cards - or a dual head card if necessary (ATI or
Matrox).
I may need to go beyond two monitors though. But for now, two will be OK.

In photon, I assume each monitor can be looking at a different part of the
photon world -
is this correct.

Please point me in the correct direction if this is possible.

Yes, or each monitor can have a different Photon session.
